Fantastic episode - the trainees are really getting it together now. What's so rewarding to watch is how they are beginning to enjoy themselves now they have the confidence that the training has given them. Well done to Paul Heathcote and his team for handing over his restaurant for the night - it must have been nerve-wracking for him!
Can't wait for the next instalment...let's hope they continue to enjoy it too.

As a member of the AFWS. it is good to see the Academy getting involved with this project. It is also good to see one of industries top chef no banging on about their book oe tv series, but looking at the other side of the kitchen door.
I have involved in front of house service for 25 years working my way through various sector of the hospitality industry. This series show how bad we still are, I cringed at some of the attituteds of the trainees. If I had spoken or shown disrespect to my Head Chef or Restaurant Manager as they had to Michel I would have been sent packing no questions asked.
Michel was right I what he did in expelling joelle for disrespect and acting the fool. If he could have channelled his energy and been more positive he may well of made a good waiter.
I can't wait to see the next episode.
