Sommelier – Hotel du Vin and Malmaison

The role involves taking responsibility for the wine service of the restaurant, the wine cellar, the sommelier team and providing amazing hospitality to our guests. You will be required to manage the wine list, stock, suppliers and supervise the assistant sommelier and waiters serving the beverages. You will also be required to ensure all standards are met with attention to detail, recommending wines and creating memories of an experience the guest will never forget.
We are looking for someone who is passionate about wine and delivering amazing hospitality to our guests. The ideal candidate will be organised, an excellent communicator, hands on who has excellent attention to detail. Licence to Work
The Academy of Food & Wine has just completed it's fourth entry-level skills based course for front of house service staff.
Successful candidiates from the Licence to Work in Hospitality Service course have been schooled in a number of key skills areas including customer service, food and drink service, image, attitude and communication skills, as well as gaining their health and safety and food hygiene certificates.
Those who have passed the course are now looking for work. The Academy have outlined a brief synpopsis on each delegate.
Licence to Work – successful candidates - March 2009
Olusola Sehindemi From the outset Olusola has been keen to progress on this L2W course. Although she has never worked in the Hospitality Industry before, she has worked as part of a hospitality team at her local church, welcoming newcomers. She enjoys organising events for her church, family and friends from organising the cutlery and DJs through to the room layout, food and presentation. Previously Olusola has been a secretary at London Borough of Hackney and is now keen to try her hand in Hospitality. Her key focus has been to develop her front of house hospitality skills in order to fulfil her ambition of running her own Conference and Banqueting company. She has a calm and focused attitude.
Elizabeth McGowan Elizabeth has not worked in the hospitality industry before, but is interested in developing her skills and training to learn more in order to gain confidence. Now her children have got older she has more time to develop herself with a new job. She is very good at helping and dealing with people. At present she spends two days a week providing voluntary help and support in helping the homeless. Elizabeth is keen to pursue a back of house role such as helping in the kitchen, or housekeeping in order to gain confidence. Elizabeth has been continually punctual on our course and consistent each day. She has a friendly disposition.
Cintia Aparicio Although Cintia had to miss 2 days of our 9 day L2W course due to a family emergency, she is our most promising hospitality training delegate on our course. She is enthusiastic and keen to pursue a career in the industry. She is a quick learner and would like to gain a role in Front of House Service. She is especially keen on customer facing departments as she has some previous experience of helping on large events. She has had previous bar work experience. I feel she is one of our strongest contenders for a front of house role.
Shunlau Chan Chan is keen to pursue a job in Hospitality. Previously he has worked in the construction and electrical construction works for nearly 10 years. Previous to that he spent four years in hairdressing. Chan is a man of few words, but he is taking on board information we are providing on the L2W course, which is reflecting in his test results. He is flexible with his hours and time.
Julias Chideme Julias is an extremely confident and friendly individual. His happy persona really shines through! He has really enjoyed the 5 day course and has been an asset to the group. He has had some previous experience working in reception of a hotel, but is keen to focus on improving his front of house skills in order to gain a career in Hospitality. He has the flexibility to be based wherever the job may take him within the UK. Julius would make an ideal team member.
Njilo Mandewa Njilo has a pleasant and calm disposition. In the past Njilo has worked within the care industry but is keen to take steps in order to pursue a career in Hospitality. She is flexible and adaptable when it comes to where the job may be located and has made it clear that she is willing to work any day/s and any hours in order to gain the post.
Maria Sibal Maria is extremely dedicated, hard working and punctual individual. Only recently has she become unemployed; prior to this she worked in Gala Casino serving food and beverages to customers for 15 years. She is personable with a friendly disposition. She has also worked as a chambermaid at the Dorchester and is happy to take on a front of house role, where she can build on her skills and experience. Future goals involve possibly supervising a small team of staff.
Nicola Barwell Nicola has been an enthusiastic and team player within our License to Work training course. She has really enjoyed learning more about Hospitality. Her ‘sunny’ disposition and ‘can do’ attitude has had a real positive influence on the group. I believe Nicola would work well in a team environment and is quick to learn new skills. Her sense of humour coupled with her dedication for the course; make her a good candidate for a front of house service post. I believe she is ready to make a career in hospitality and will be a team asset.
Subhash (Sam) Verma Subhash has a pleasant and calm disposition and has been very punctual for attendance on our course. He is keen to take steps to pursue a career in hospitality and has enjoyed listening and taking part. Previously, he ran his own company importing and exporting polythene from Singapore. He has also been a mini cab driver, and an assistant manager of a dry cleaners. Subhash has suffered from cancer over the past five years, but is keen to get back to work and embark on a hospitality service role.
Angela Campbell Angela was one of our top candidates on the course. She is an extremely well presented individual who was consistently punctual and hard-working. She has shown particular interest in Hospitality and is keen to pursue a career in Hospitality. Angela is very good at working with others, she has a professional outlook. She has managed a small team of staff at Sainsbury’ and spent a lot of time helping friends and family organise and run bespoke functions for special events. She enjoys organising and preparing food and drinks for each function and has gained great satisfaction from running them. Angela would really suit a front of house role and has preference for working in the Conference and Banqueting side of a hotel
Barry White Barry has been a confident and focused candidate on our course. He has a positive attitude and a strong focus on what he wants to achieve in his hospitality career. Recently Barry has decided to make an important step in achieving his goal at become a chef. He has worked as a foreman involved in dealing with suspended ceilings for a company called ‘impact’ for the past eight years but wants to follow his dream and change his hobby into a career. He has attended two previous chef courses in Chang Mai, Thailand and Jamaica. He is flexible and committed individual and I feel if the right post came along in which they are willing to start him as a commis chef with clear progressive routes to chefing then he would make the ideal candidate.
Ashley Barrett Ashley was our top candidate on this License to Work course. Both his theory and practical results were the highest in the group. He is extremely well presented, punctual, hard-working and focused on hospitality and improving his skills. He has worked in a nursery as a chef’s assistant and a variety of retail units. Although Ashley lacks confidence and clearly wants to improve his hospitality skills, we feel he would make an ideal front of house team player; with the right training and support in building his confidence with customers we feel he would be a real asset to any hospitality business and unreservedly put him forward for a front of house post. His focus and resilience and attention to detail make him an ideal candidate.
Redentor Sibal Redentor is a very hard working and practical individual. Only recently has he become unemployed; prior to this he worked in Gala Casino as a chef. He is a very personable individual and is always well presented and punctual. Redentor would be happy working in either front or back of house.
